This will be a virtual class using Zoom, and will include a lecture and slides plus time for questions and answers and sharing ideas. Zoom can be accessed via your computer or phone.
This class provides an overview of food preservation methods that will help students understand the difference between various food preservation methods and choose methods that will allow them to safely preserve fresh fruits and vegetables and create delicious and convenient food items. The class will include a slide presentation & lecture on the following topics, with time for discussion and questions and answers:
• Reasons for preserving food
• What is food spoilage & what are its causes
• How food preservation methods prevent food spoilage
• Sources of starting materials
• Considerations when choosing a food preservation method
• Comparisons of different food preservation methods
• Equipment needed for different food preservation methods
• Good sources of information on food preservation techniques and recipes
• Safety tips
Eleanor Goodall is a BFF Volunteer and enthusiastic gardener who has been honing her food preservation skills for over 25 years. Her background in biology and engineering helps her understand the science behind food preservation, and gardening and foraging hobbies provide raw ingredients and motivation to take advantage of seasonal bounty. She enjoys cooking, eating, and sharing the harvest from her garden.
A handout with a summary of key concepts and lists of reference materials will be provided.
